Cognac is a type of brandy produced in the region of Cognac in the southwestern of France. It is made from white wine that has been distilled twice and then aged in oak barrels for a minimum of two years. The production of Cognac is heavily regulated by the French government, ensuring that only the highest quality spirits can be sold under the name "Cognac". The grapes used to make Cognac are primarily Ugni Blanc, also known as Trebbiano, but other varieties can also be used, including Folle Blanche and Colombard.

Cognacs typically age for a minimum of two years, with longer aging times producing a more complex and refined spirit. The aging process also causes the alcohol content to decrease gradually as water evaporates from the barrels.

There are several classifications of Cognac based on the aging process and quality. The youngest and least expensive type is VS (Very Special), aged for at least two years. VSOP (Very Superior Old Pale) Cognac is aged for at least four years, while XO (Extra Old) is aged for at least ten years. In recent years, the French government has added a new classification, "Hors d'Age", which means "beyond age", and can be used to label Cognacs aged over 30 years.

Cognac is often enjoyed as an after-dinner drink, served neat or on the rocks. It can also be used in cocktails, adding a depth of flavour and complexity to drinks.
